Interesting topic.
I think it is mainly the brain that plays, for the same
reasons given previously. Your brain controls movement
of your extremities, hands/arms/wrists etc.
An example: Silent score study. If just sitting in front
of your music and studying it increases your ability to
play it well (it does in my case and others, I'm sure),
then it must be your brain that controls your playing.
As dgee mentioned, the heart plays a huge role.
